Homemade Chicken Breakfast Sausage
2 chicken breasts ground up in the food processor
1 tsp Kosher salt
pepper to taste
1 tbsp fennel seed (if you don't like the whole seed, grind it up)
1/4 tsp sage
1-2 tbsp maple syrup(sugar free of course!)
I really have to reccomend that you grind your own chicken breast in the food processor for this one. If you don't have one and must use already ground chicken, then I'm sure it will taste good, but the texture may be different. Grinding your own produces a nice tender meat. Ok so all's you do is throw the two chicken breasts into the food processor and pulse them until they are all ground up. Transfer the meat to a bowl. To it add the remaining ingredients and mix it well with a fork. Make it into a pattie and fry it in a non stick skillet sprayed with cooking spray! That's it! When I just made it I used 2 tbsp of syrup and I liked it, but it had a pretty strong maple flavor to it, so if you're not a huge maple fan, than try it with 1 tbsp. I don't have the breakdown for this one, but it makes alot of sausage and I'm quite sure that it's extreamly low in fat and calories! If you try it, let me know what you think and enjoy!!! |

I've made these twice - once exactly as your recipe reads, and once without any maple syrup at all. In the "no maple" version, I made them more savory by adding 1/4 t Italian spice, 1/4 t Garlic Powder and 1/4 t Onion Powder.
I made mine into 12 patties, and used two as a serving. That works out to 90 calories, 18 grams of protein and just a hair over 1 gram for two. (My two chicken breasts weighed about 16 ounces total.)

I made them up this AM
I used 1lb ground Turkey, 93% less fat'
got a lot of the fat out when I cooked them.
I got 12 out of it, will use 1 a day for my breakfast
Egg Mac Muffin,
They are good, think the next time I may add a little
garlic

This is really good. I only used 1 tbsp syrup, but next time I will use 2. Great to freeze and pull out when needed. I chopped one patty up and put it in 4 servings of country gravy to make sausage gravy. Then I cooked up 1/4 cup egg beaters and put it on Christinas Honey Wheat Dough I previously cooked into rounds, throw in the toaster oven for a bit and ta da, now I had Christinas Breakfast Pizza!! I'm definitely going to use these for Sausage McMuffins too!! _________________ Jen

I wouldn't consider you a spoil sport at all! We all have different tastes and that's what makes the world go around. Every recipe I do isn't going to please every person. I certainly don't expect it to! I do most of there recipes for myself and share them with everyone in the hopes that they will find something they like. I happen to love this sausage, but I'm sure you aren't the first person to try it that didn't like it! Not a big deal!! _________________
