NOTE: I didn't write out a specific recipe for this, just how I made it. You can alter the fillings to suit your tastes. I made this after Taco Bell came out with the crunch wrap supreme and my hubby and kids would always get them. They looked so good, but totally NOT worth the calories. This is how I made mine and I've since made it with taco meat and other fillings, and it's always good. I hope you'll like it too.
How to make a "Crunch Wrap":
Take a Josephs' Lavish bread and in the middle of it, about 4" square since I will be folding it up into a square, I spread some ff cream cheese. I would have used the one in the onion and chive, but I'm out. This worked just as well though and for half the calories. On top of that I put some chopped up green onion (whites and tops), followed by some chopped roasted red pepper, then I chopped up some left over grilled chicken (any meat or lunch meat will work great though). On top of that I put a few small dollops of sour cream, a package of taco bell fire sauce and topped it with a slice of veggie pepper jack cheese. Then I folded the corners into the middle, overlapping slightly so it's all enclosed well. Then I heated up a non stick skillet and sprayed the first side of the wrap with cooking spray and put that side down in the pan over medium heat. I then sprayed the top of it with a little more cooking spray. I flipped it over when the bottom was begging to brown nicely and let the other side cook. Oh my heaven's!! This one will become a staple for me for sure!! I can't wait to try it with other fillings too!! The outside comes out so nice and crispy and the inside is so gooey and yummy!!
More variations of this recipe:
Beef and Bean Crunchwrap supreme
1 Josephs' Lavish
1 NS beef patty (or meat of choice)
1/4 c canned pink beans
1 tbsp chopped green chilis
2-3 tbsp petite diced tomatos
2-3 tbsp finely diced onion
1 tsp taco seasoning mix (dry)
cilantro to taste
jalepeno to taste
2 tbsp ff shredded cheddar cheese
Hydrate the beef patty, preferrably with beef broth. Set asde. In a non stick skillet, sautee the onion until translucent. Crumble the beef patty and add to the skillet along with the beans, tomatoes, chilis, the seasoning mix, cilantro and jalepeno. I just used the jarred pickled jalepeno that are already chopped pretty fine. Sautee for a couple of minutes to allow the flavors to combine. Turn off heat and set aside. Take your lavish bread and in the middle place the cheese about the side of a 4x4 square since you will be folding it into a square. Place the beef and bean mixture on top of the cheese and start to carefully fold the lavish one corner in at a time so that you create a square package out of it. Carefully hold it in your hand so the seam side is up and spray it with cooking spray. Place this side down in a preheated skillet over medium high heat. Spray the top side with cooking spray. When the bottom begins to brown, carefully flip it over and brown the other side. You can serve it with salsa of choice or I used sour cream that I blended with a bit of cilantro. I add a little taco sauce to the inside, but you don't want to add much or it will get soggy!! This would count as your entree + protein if using it for lunch. If for a dinner, it would be your entree.

My boys love it too....and now my son makes it often. It is easily adaptable to whatever you have around. I have used leftover chicken, steak, pork and taco seasoned meat and different kinds of cheese. I have also added leftover grilled veggies to it (onion, zucchini and mushrooms)
I love to put tons of fresh cilantro on it if I have it around....I like to serve the sour cream on the side with fresh hot salsa!! It's dreamy.
This is one of my favorite recipes.
Kathie | Oh my Kathie, when's lunch??? LOL!! I'm going to have to call on you to write some reviews when I get my next book going!! I'm so glad you like this. Isn't it the best when the kids love something that's healthy for them too??!! Thanks so much for posting the review!! |
